The harvest comes to a close, all it takes is a lit hearth: the soft crackle of firewood, the warmth rising gently through the kitchen, for the heart to feel just a little fuller, foretelling a season of warmth and fulfillment. 

Such moments and the image of Northern Vietnam’s hearth in the heart of the stilt houses inspired us to bring that warmth to “Hearth”, the Winter–Spring menu with 10 courses, made from our team’s stories of culinary and exclusive ingredients that can be found in this season only.
