Meet Ms. My of Chapter Dining – A Quiet Force Behind Every Experience

At Chapter Hanoi, Ms. My serves as an Assistant Manager in the Front of House, where she oversees not only the flow of service, but also the overall quality of each guest’s experience.

Behind every seamless moment lies a process shaped by observation, intention, and constant refinement. In her approach, service extends beyond execution, it becomes a practice of understanding, where every detail plays a role in shaping how an experience is ultimately felt.

A Path Chosen with Intention

My’s journey was never shaped by chance, but by a clear and deliberate sense of direction. From an early stage, she recognized her desire to grow within the fields of management and training – a path influenced not only by her academic background in Human Resource Management, but also by a genuine interest in people and team dynamics.

At Chapter, this intention found the right environment to develop. The culture of continuous improvement encouraged her to take on greater responsibilities, not as a response to opportunity, but as a conscious decision to refine her capabilities. For My, stepping into leadership roles such as FOH (Front of House) Captain and later Assistant Manager was not a natural progression that simply unfolded over time, but the result of consistent, intentional effort aligned with a clearly defined goal.

When Effort Becomes Meaningful

In the service industry, meaning is rarely found in grand gestures. Instead, it reveals itself in subtle moments when a guest’s experience becomes more complete because of small, often unseen adjustments. For My, these moments serve as quiet affirmations of her work.

In a context where service is sometimes undervalued, recognition from guests carries a deeper significance. It is in these instances when efforts that often remain invisible are acknowledged that the profession transforms into something more personal. The sense of fulfillment comes not from visibility, but from knowing that her contribution has made a tangible difference, however small, in shaping a guest’s experience.

Designing Experiences Beyond Service

A fine dining experience is often associated with elements such as cuisine, ambiance, or technical precision. Yet, for My, these are merely components that support a far more essential outcome: emotion. What guests ultimately carry with them is not a detailed memory of each course, but the feeling they experienced throughout the evening.

Service, therefore, extends beyond execution. It becomes a process of guiding, observing, and connecting – ensuring that every interaction contributes to a cohesive emotional journey. While emotions cannot be fully controlled, My approaches her role with a clear mindset: to maintain consistency in every aspect that can be managed, from attentiveness to communication and detail.

Through this approach, service evolves into something more intentional. It is no longer confined to meeting expectations, but becomes a means of creating meaningful connections where each detail, no matter how small, plays a role in shaping an experience that resonates beyond the table.

Understanding the Unspoken

In the service industry, what matters most is not always expressed verbally. The ability to “read” guests comes from careful observation, understanding context, interpreting behavior, and recognizing subtle shifts in emotion throughout the experience. For My, this is not a matter of intuition alone, but a skill developed through continuous exposure and deliberate attention.

Each interaction becomes a source of insight. From the moment a reservation is made, details such as the purpose of the visit, personal preferences, or special occasions begin to shape an initial understanding of the guest. This awareness is then refined during service, as small cues,  the pace of dining, levels of engagement, or non-verbal responses provide further clarity.

Importantly, this process extends beyond the individual. At Chapter, reading the guest is a collective effort, where information is shared across the team to ensure alignment in both preparation and execution. In this way, understanding the unspoken becomes not an act of assumption, but a structured practice of observation and active listening.

Leading Through Pressure and People

Behind every seamless dining experience lies the constant pressure of maintaining consistency across even the smallest details. What appears effortless to guests is, in reality, the result of precise coordination, timely decision-making, and the ability to respond immediately to unforeseen situations.

In her role as Assistant Manager, My navigates this complexity by focusing not only on operational performance, but also on people. The challenge is not simply to uphold standards, but to do so while sustaining the team’s morale and energy throughout service. This requires a balance between clarity and composure – ensuring that issues are addressed quickly without disrupting the overall flow or placing unnecessary pressure on individuals.

Rather than reacting impulsively, My prioritizes preparation and communication. Through structured briefings, clear role allocation, and anticipation of potential challenges, the team enters each service with a shared understanding and confidence. At the same time, she recognizes that unpredictability is inherent in the industry. Flexibility, therefore, becomes essential, not as a compromise of standards, but as a controlled adaptation that allows the team to maintain both quality and composure under pressure.

Growth Beyond the Role

Working in the service industry shapes more than professional capability; it gradually transforms the way one perceives and responds to the world. For My, the role has been a continuous process of personal development, extending far beyond the boundaries of the workplace.

Through daily interactions, she has developed a greater awareness of emotions – both her own and those of others. This has led to a stronger ability to regulate responses, communicate with intention, and approach situations with a broader perspective. In an environment where conditions shift rapidly, problem-solving becomes second nature, requiring both efficiency and sensitivity in equal measure.

Over time, these qualities begin to influence life beyond service. The ability to remain composed, to listen attentively, and to respond with clarity becomes not just a professional skill set, but a personal framework. In this sense, the role is not only a position to fulfill, but a space for continuous growth that shapes both the individual and the way they engage with the world around them.
