Today, let’s hear a detailed review from our guest, Mr. Noah from Switzerland, who recently experienced the Sunshine tasting menu at Chapter Dining Hanoi:
The moment I stepped into the restaurant, I was taken in by the serene and calming atmosphere. There was a gentle elegance in the air — soft lighting, subtle woody notes, and the warm welcome from the staff.
The first thing that caught my attention was Chapter’s open kitchen, where the chefs were fully immersed in their craft — choreographed in motion, focused, and precise. Once I was guided to my table, I could sense that every element of the space had been arranged with clear intention — neat, refined, and thoughtfully curated.
Then, the experience truly began.
When introducing the menu, three beverage options were presented to me: wine, non-alcoholic pairings, and locally crafted alcohol. I chose the non-alcoholic pairing.
Each course from the Sunshine menu was introduced with care and a thoughtful story. What impressed me most during this fine dining experience was the postcard that accompanied each dish. The staff would gently place the dish, along with a small “food card” that explained the inspiration behind it.
On the front was an image of Vietnam: locals, villages, landscape,… And on the back, a local story about the origin of the ingredients used. These cards didn’t just talk about ingredients. They also shared insights into Vietnamese culture and everyday local life, which made each dish feel more personal and familiar.
The flavors were vibrant yet restrained, allowing the natural quality of the ingredients to shine. What stood out to me was how the 13 courses were carefully arranged in sequence. From appetizers to mains to desserts, each dish made me feel as though I was traveling through a different region of Northern Vietnam.
The three dishes that impressed me the most were the cuttlefish with prawn, trevally, and pigeon. Each offered a complete experience, from flavor to presentation.
And I can’t forget to mention the non-alcoholic pairings, which still carried the essence of local spirits. They were thoughtfully curated to complement each course in the Sunshine menu beautifully.
From start to finish, it wasn’t just a dinner. It was a well-paced, immersive story told through food, environment, and the people behind it.
