As harvest season arrived, “Flourish” explored a time of abundance and tranquillity. The story then moved closer to home with “Hearth,” returning to the warmth of the kitchen, the family table and the personal food memories of Chapter’s culinary team. Most recently, “Lucent” approached summer through the balance of Yin and Yang, the Five Elements, and the Vietnamese practice of eating in harmony with the weather.

Now, as autumn gradually gives way to winter, Chapter begins another seasonal chapter. The new menu brings together the fullness of the harvest and the quieter flavours of the colder months. Although its ingredients and expressions continue to change, one belief remains constant: contemporary Vietnamese cuisine can move forward while staying closely connected to the land, its people and the culinary traditions of Northern Vietnam.
What Makes Chapter’s New Autumn Menu Special?
Autumn ingredients often arrive at their most generous. Fruit is ripe, herbs remain aromatic and the harvest brings a sense of fullness to the table. Chef Quang Dũng and the Chapter team bring both moods into the same menu. The early courses feel bright and lively, while smoke, fermented rice, onion, duck and northern aromatics gradually introduce greater depth.

Chapter describes the menu as an expression of local, seasonal ingredients from Northern Vietnam. However, its regional identity does not depend on every ingredient coming from one place. Amaebi, Kinmedai, caviar and A5 Wagyu appear alongside bottle gourd, dill, fermented rice, Đông Tảo chicken and mắc mật.

As that freshness begins to fade, smoked eel, caviar and fermented chilli changes the mood. The soft richness of eel carries a lingering smoky aroma, while caviar sharpens each bite with salinity. Fermented chilli then appears at the finish, bringing gentle heat and acidity that draw the palate further into the menu.
From smoke, the meal moves towards memory with chicken phở, egg yolk and Đông Tảo chicken feet. It does not arrive as the familiar bowl found on Hanoi’s streets, yet its warmth remains instantly recognisable.
